Casein gelation under simultaneous action of transglutaminase and glucono-,-lactone

Abstract Casein solutions (5% w/v) were treated with microbial transglutaminase (MTG) and glucono-,-lactone (GDL) under varying conditions in order to obtain gels. Storage modulus (G ,) and gelation time of the gels were measured by oscillation rheometry, while protein cross-linking was determined by gel permeation chromatography. The addition of only GDL to milk resulted in very weak gels, while MTG on its own was not able to create gel networks. Simultaneous action of both ingredients led to gels, the firmness of which was linearly related to the added amount of MTG, but passed through a maximum with rising GDL concentrations. Using chromatographical analysis, increasing G , values were interrelated with the formation of MTG-induced oligomers. The gelation time was directly proportional to the GDL concentration but not influenced by the addition of MTG within the studied range of concentration. [source]


Selection and identification of anaerobic lactobacilli producing inhibitory compounds against vaginal pathogens

Abstract Two strains of Lactobacillus crispatus (15L08 and 21L07) and one strain of Lactobacillus jensenii (5L08) were selected from amongst 100 isolates from the vaginas of healthy premenopausal women for properties relevant to mucosal colonization and the production of H2O2 and/or bacteriocin-like compound. All three strains self-aggregated and adhered to vaginal epithelial cells, displacing well-known vaginal pathogens, such as Gardnerella vaginalis and Candida albicans. Lactobacillus crispatus 15L08 was characterized as a potential H2O2 producer. A high level of bacteriocin-like compound was synthesized by L. jensenii 5L08, with a bactericidal mode of action for G. vaginalis, C. albicans and Escherichia coli. However, H2O2 -dependent activity alone was not sufficient to inhibit the growth of C. albicans. Simultaneous actions of H2O2 and bacteriocin-like compound produced by lactobacilli may be important for antagonizing pathogenic bacteria. These strains of lactobacilli may be excellent candidates for eventual use as probiotics to restore the normal microbial communities in the vaginal ecosystem. [source]

ABSTRACT Achieving the Millennium Development Goal of halving poverty will require simultaneous action on two separate fronts: helping poor people escape from poverty, and stemming the flow of people into poverty. This article examines forty Peruvian communities, and finds that descents into poverty have occurred alongside escapes in every one of them. Escape and descent are asymmetric in terms of reasons: while one set of reasons is responsible for escapes from poverty, another and different set of reasons is associated with descent. Making progress in poverty reduction will require measures to accelerate escapes whilst at the same time slowing down descents. The article looks at the different policies which will be required to serve these two separate purposes. [source]


A polygenic model for integration of linkage and pathway information

Abstract We introduce an approximate model for linkage curves which accommodates the polygenic structure of complex diseases and accounts for the simultaneous action of closely located genes. The model is extended so that information on biological pathways can be integrated. Using data on rheumatoid arthritis, we describe some of the many applications which the model allows: it can be used to test for residual linkage in the presence of already established loci, to derive a global test for linkage, to test for the relevance of a gene list in terms of linkage and to help in candidate gene prioritization by integration of gene-pathway annotation data. Control of multiphoton radiative recombination through the action of two low-frequency fields

Abstract nterference effects caused by the simultaneous action of a two low frequency fields with commensurate frequencies during laser assisted radiative recombination (LARR) are investigated theoretically. Intra-specific effects of sea cucumber (Apostichopus japonicus) with reference to stocking density and body size

Abstract The present studies deal with the intra-specific effects of sea cucumber Apostichopus japonicus with unlimited food resources, especially the effects of stocking density on growth variation of the animal and energetic changes of small individuals under the stress of large individuals. The results showed that with the initial body weight of 5.12±0.09,6.11±0.26 g of sea cucumber among the densities of 5, 10, 20, 30, 40 and 50 ind./100 L, the density of 20 ind./100 L was the optimum stocking density because of its highest specific growth rate, crude protein content and crude lipid content in tissue. Individual growth variation of A. japonicus increased with the increase of stocking densities, whereas no significant differences in variation were found when the density was over 30 ind./100 L (P>0.05). The low-weight individuals under the stress of heavy-weight individuals exhibited obvious changes in energetics, such as lower ingestion rate, lower energy deposited as growth but higher respiration and excretion. The coefficient of variation in growth of the animals was over 70% due to the simultaneous action of aggression and maybe a factor of chemical mediator, and led to significant changes in the energetics of small-sized individuals.
