DAS ABSTRACT Lye (sodium hydroxide [NaOH]) peeling is the most common method for peeling tomatoes in the Midwest U.S. With the rise in the cost of NaOH and the associated disposal problems, alternative methods for peeling need to be examined. Solutions of NaOH, potassium hydoxide (KOH) and calcium hydroxide (Ca[OH]2) at different concentrations were compared to determine their efficacy as peeling agents. Ca(OH)2 was ineffective as a peeling agent because of its low solubility. KOH produced peeling equivalent to NaOH, but at half the normality. A lower normality is needed because of the increased reactivity of KOH compared to NaOH. This is further demonstrated by the addition of salts to the solution. The use of KOH instead of NaOH may result in cost savings and decreased waste disposal problems. [source] EFFECTS OF ENZYME-AIDED PEELING ON THE QUALITY OF LOCAL MANDARIN (CITRUS RETICULATA B.) SEGMENTSJOURNAL OF FOOD PROCESSING AND PRESERVATION, Issue 5 2004FANNY LIU ABSTRACT Pectinases are observed to selectively alter the albedo structure of citrus fruits and, hence, aid the removal of the peel and adhering albedo layer. This study was carried out to determine the optimum conditions needed to peel local mandarins using pectinases (Peelzym II, Novo Nordisk, Denmark). The experiment variables were enzyme concentration, vacuum pressure and vacuum infusion time. The mandarins were first scored from the stem end to the blossom end, followed by immersion in 1000 mL of enzyme solution at a set vacuum pressure and ambient temperature (27 ± 1C). Only one parameter was varied in any one experiment. Peelzym II at 0.4% v/w, 650 mm Hg vacuum and 16 min of vacuum time were optimal. The enzyme-peeled fruit segments were judged by the panelists using three different sensory tests to ascertain their appeal to consumers. A significant (P < 0.05) difference between enzyme-peeled and hand-peeled segments was found, with the panelists preferring the enzyme-peeled segments. Peeling methods at 80, 90 or 100C temperatures; in 13, 18 or 23% of NaOH solutions and for 3, 4 or 5 min durations were tested and compared with hand peeling. Weight (fruit tissue) loss in hand peeling was higher than alkali peeling. Peeling with alkali was easier. Nutritional value (ascorbic acid content) of alkali peeled fruits was higher than hand peeled kiwi fruit. Because of less weight loss, better green color and high pectin content the method including 15% of NaOH solution at 95C for 4 min was selected as most advantageous peeling method. [source] Deep Phenol Peeling and Fat Injection: Treatment Option for Perioral Wrinkles in a Scleroderma PatientDERMATOLOGIC SURGERY, Issue 7 2005Yitzhack Ramon MD Background Scleroderma is characterized by abnormal growth of connective tissue, often manifested with hard and tight skin. The viscous properties of the skin are impaired, and the main histologic changes include a thicker dermis, absence of pilosebaceous units, and a decreased space between collagen bundles. Often these patients have wound healing problems. Objective The objective was to demonstrate a case of scleroderma that had deep phenol perioral peeling and fat injection into the lips. According to our bibliographic search, this is the first report in the English literature of using these modalities in scleroderma patients. Methods A 64-year-old woman suffering from scleroderma for more than 20 years came for improvement of her perioral appearance. We decided to manage her deep perioral wrinkles by deep peeling using the Baker formula and concomitantly to use autologous fat injection to augment her thin lips. Results The healing of our patient after these two interventions was uneventful, and satisfactory results have been obtained. Conclusion Based on our experience, this intervention may be suggested for patients suffering from scleroderma after a detailed explanation of the possible wound healing difficulties is provided to the patients. Koppel MD Background. Medium-depth chemical peels are an effective and popular treatment for actinic damage, fine wrinkles, and pigmentary dyschromias. However, they are also uncomfortable. A previous attempt to study the effectiveness of a topical anesthetic gel in 35% trichloroacetic acid (TCA) peeling found a reduction in discomfort but an increased depth of penetration and delayed healing. Objective. To evaluate both the efficacy of two topical anesthetic agents in medium-depth combination peeling as well as the histologic result from chemical peeling combined with topical anesthesia. Method. Seventy percent glycolic acid (GA) was applied to the entire face of 10 patients and diluted with water after 2 minutes. This was followed by the sequential application of EMLA cream (lidocaine 2.5% and prilocaine 2.5%), ELA-Max cream (lidocaine 4%), and placebo to selected areas on the face for 30 minutes without occlusion. These agents were then removed and 35% TCA was applied to the entire face. The level of discomfort felt by the patients during the TCA peel was recorded, clinical photographs were taken, and bilateral preauricular biopsies were performed at baseline, 48 hours, and 90 days postoperatively. Results. Clinically there was a statistically significant decrease in pain felt during the 70% GA-35% TCA peel with topical anesthesia when compared to the control. There was no statistically significant difference in efficacy between EMLA and ELA-Max. There was also no difference in either the clinical or the histopathologic appearance between the medium-depth peel combined with topical anesthesia and the medium-depth peel with control. Conclusion. Both EMLA and ELA-Max decrease the discomfort felt during medium-depth combination chemical peeling without influencing either the clinical or the histopathologic result. Lynn Abstract Methods for the layer-by-layer deposition of oppositely charged polymers on surfaces can be used to assemble thin multilayered films using a broad range of natural, synthetic, and biologically relevant materials. These methods also permit precise, nanometer-scale control over the compositions and internal structures of multicomponent assemblies. Provided that the individual components of these materials are selected or designed appropriately, these methods provide tantalizing new opportunities to design thin films and coatings that provide spatial, temporal, or active control over the release of one or several different agents from surfaces. The last two years have seen a significant increase in reports describing the development of new chemical, physical, and biomolecular approaches to the controlled erosion, triggered disassembly, or general deconstruction of multilayered polymer films. In this Progress Report, we highlight recent work from our laboratory and several other groups toward the design of ultrathin multilayered assemblies that i),permit broad, tunable, and sophisticated control over film erosion, and ii),provide new opportunities for the localized release of macromolecular therapeutics, such as DNA and proteins, from surfaces. [source] PEELABILITY AND YIELD OF PROCESSING TOMATOES BY STEAM OR LYEJOURNAL OF FOOD PROCESSING AND PRESERVATION, Issue 1 2006ELISABETH GARCIA ABSTRACT Approximately 25% of the processed tomatoes grown in California are made into value-added foods such as whole peeled and diced tomatoes. Peel removal is the first step in this process, and it must be optimized for both quality and yield. The effect of peeling conditions on tomato cultivars Halley 3155 and Heinz 8892 (H 8892) was evaluated. Considerable texture loss results from peeling; however, firmness was greater for cv. Halley 3155 than for cv. H 8892 regardless of peeling conditions utilized. Peeling under low steam pressures (12 psig) was insufficient to adequately peel either cultivar. While high pressure steam (18 psig) was more efficient at peel removal, increasing vacuum level from 20 in. to 24 in. did not improve peelability of either cultivar. Because cultivar affected peelability and yield, specific tomato cultivars should be evaluated and directed to either paste or whole peeled and diced tomatoes as appropriate. [source] Pesticide residues in field-sprayed and processed fruits and vegetablesJOURNAL OF THE SCIENCE OF FOOD AND AGRICULTURE, Issue 10 2004María Jesús Chavarri Abstract This study was initiated to determine what residues of six insecticides (organochlorine, organophosphorus and pyrethroids) and four dithiocarbamate fungicides remained on raw agricultural commodities after harvest and to study the effect of the subsequent commercial processing on the residues. Sprayed crops of tomatoes, red peppers, asparagus, spinach, artichokes and peaches harvested after controlled field trials contained residues well below the maximum residue levels, except for lindane in tomatoes and acephate in artichoke. Commercial processing procedures led to large reductions in residue levels in the finished products. Washing removed all residual lindane, chlorpyrifos and cypermethrin from tomatoes. Chlorpyrifos residues were reduced by 67% during wood-fire roasting of peppers, and subsequent peeling removed all the remains. Peeling and blanching of asparagus reduced chlorpyrifos concentrations to undetectable levels. Processing of artichokes eliminated acephate and chlorpyrifos after blanching. Acephate in peaches survived successive processing steps until the final heat process that destroyed remaining residues. The net results can contribute to assure the consumer of a safe wholesome food supply. [source] Effect of chemical peeling on photocarcinogenesisTHE JOURNAL OF DERMATOLOGY, Issue 10 2010Mohamed ABDEL-DAIM Abstract Chemical peeling is one of the dermatological treatments available for certain cutaneous diseases and conditions or improvement of cosmetic appearance of photo-aged skin. We assessed the photo-chemopreventive effect of several clinically used chemical peeling agents on the ultraviolet-irradiated skin of hairless mice. Chemical peeling was done using 35% glycolic acid dissolved in distilled water, 30% salicylic acid in ethanol, and 10% or 35% trichloroacetic acid in distilled water at the right back of ultraviolet-irradiated hairless mice every 2 weeks for glycolic acid, salicylic acid and 10% trichloroacetic acid, and every 4 weeks for 35% trichloroacetic acid for a total of 18 weeks after the establishment of photo-aged mice by irradiation with ultraviolet B range light three times a week for 14 weeks at a total dose of 6.66 J/cm2. Tumor formation was assessed every week. Skin specimens were taken from treated and non-treated area for evaluation under microscopy, evaluation of p53 expression and mRNA expression of cyclooxygenase-2. Serum level of prostaglandin E2 was also evaluated. All types of chemical peeling reduced tumor formation in treated mice, mostly in the treated area but also in the non-treated area. Peeling suppressed retention of p53-positive abnormal cells and reduced mRNA expression of cyclooxygenase-2 in treated skin. Further, serum prostaglandin E2 level was decreased in chemical peeling treated mice. These results indicate that chemical peeling with glycolic acid, salicylic acid and trichloroacetic acid could serve tumor prevention by removing photo-damaged cells. [source] Lactic Acid Chemical Peels as a New Therapeutic Modality in Melasma in Comparison to Jessner's Solution Chemical PeelsDERMATOLOGIC SURGERY, Issue 12 2006KHALIFA E. SHARQUIE MBCHB BACKGROUND Many chemicals have been used in the skin peeling for melasma such as Jessner's solution and glycolic acid. Lactic acid is an ,-hydroxy acid that has not been used before in chemical peeling of melasma. OBJECTIVE The purpose of the present work was to evaluate the efficacy and safety of lactic acid in chemical peeling of melasma in comparison to Jessner's solution chemical peels. METHODS This study was conducted at the Department of Dermatology and Venereology, Baghdad Hospital, in the period between April 2001 and August 2002. Thirty patients with melasma were included in this study. They were mostly of skin type IV according to Fitzpatrick's classification, 26 (86.67%) were women, and 4 (13.33%) were men, with an age range from 18 and 50 years (mean±SD, 33.53±6.96 years). Full clinical examination was done to all patients including Wood's light. The severity of melasma was assessed by MASI (Melasma Area Severity Index). Pure lactic acid full strength (92%, pH 3.5) was used as a new peeling agent on the left side of the face while Jessner's solution was applied to the right side of the face. The chemical peeling sessions were done every 3 weeks until the desired response was achieved. Follow-up was carried out for 6 months after the last session. RESULTS Six patients were defaulted from the study after the first session for unknown reasons. Twenty-four patients completed the study. Twenty (83.33%) were women and four were men (16.67%). Wood's light examination showed increased contrast in all patients of mostly epidermal melasma. The number of sessions ranged from 2 to 5. All patients showed marked improvement as calculated by MASI score before and after treatment, and the response was highly statistically significant. No side effect was recorded in all treated patients. CONCLUSION Lactic acid was found to be an effective and safe peeling agent in the treatment of melasma, and it was as effective as Jessner's solution. [source] Phenol-Castor Oil: Modified Peel for Dermal MelasmaDERMATOLOGIC SURGERY, Issue 5 2006THADA PIAMPHONGSANT MD BACKGROUND Deep type of melasma is difficult to treat. Various compositions for peeling have been formulated to accomplish this. OBJECTIVE Our purpose was to determine the safe use of the new formula, which was composed of phenol and castor oil. METHODS Different concentrations of phenol and castor oil were mixed in five formulations, and the solutions were tested on the forearms of 10 volunteers. The application time was 1 minute, different from that of the original phenol-croton oil. Formula 4 was found to cause a high effect of peeling with least side effects and was used to treat deep facial melasma in 30 patients. RESULTS Higher concentrations of castor oil produced more inflammation when mixed with phenol. Formula 4 was used to clear two cases of melasma in 1 week despite no effect from prior use of a modified antimelasma cream, while some degree of fading was noted in other cases. The total number of different melasma indices was reduced from 206.4 to 91.2 in 30 patients. Hyperpigmentation was noted in five cases and hypopigmentation in one case. Neither scar formation nor cardiac arrhythmia was observed. CONCLUSION A phenol-castor oil peel with an application time of 1 minute reduces pigments in the deep type of melasma with least side effects and a high efficiency when combined with an antimelasma cream. The safe formula and the technique of application are introduced. [source] Noninvasive Lower Eyelid Blepharoplasty: A New Technique Using Nonablative Radiofrequency on Periorbital SkinDERMATOLOGIC SURGERY, Issue 2 2004Javier Ruiz-esparza MDArticle first published online: 3 FEB 200 Background. Laxity and rhytids of the lower eyelids are common cosmetic concerns. Historically, correction has either been surgical through either transcutaneous or transconjunctival blepharoplasty or ablative through laser resurfacing or chemical peeling. Therapeutic options usually require significant postoperative healing and have the potential risk of scarring ectropion or pigmentary loss. Objective. To report the use of a new technique that uses nonablative radiofrequency (NARF) to tighten noninvasively and nonsurgically the flaccid skin of the lower eyelids by treating the periorbital area to produce cosmetic improvement. Methods. Nine patients with skin flaccidity of the lower eyelids had a single treatment session with NARF in a small area of skin in the periorbital region, specifically the zygomatic and/or temporal areas. All patients were treated with topical anesthesia only. The treatment lasted approximately 10 minutes. No postoperative care was required. Results. All of the nine patients in the study achieved cosmetic improvement of the eyelids ostensibly through skin contraction. All patients were able to return to their normal routines immediately. Although the results were gradual, patient satisfaction was remarkable. No complications were seen in this study. Conclusion. This new procedure using NARF was successful in providing a safe, noninvasive, cosmetic improvement in these patients with excessive skin laxity of the lower eyelids. Postoperative morbidity, including down time and complications, was not seen. [source] Rapid Development of Keratoacanthomas After a Body PeelDERMATOLOGIC SURGERY, Issue 2 2003SueEllen Cox MD Resurfacing techniques have been traditionally limited to the face because of a lack of predictability and standardization for peeling nonfacial skin. There is a need for medical and surgical intervention for treating nonfacial skin that is actinically damaged. Medium-depth chemical peels (Jessner +35% trichloroacetic acid) remove the photodamaged epidermis to stimulate the production of new collagen in the dermis and remove lesions associated with facial actinic damage, including lentigines and actinic keratoses. Widespread actinic damage is common on the arms and chest. A 70% glycolic acid gel plus 40% trichloroacetic acid peel (Cook Body Peel) is a controlled peel that predictably enables peeling of nonfacial skin in a uniform and safe fashion with specific clinical endpoints. An unusual complication of this body peel is reported. [source] Photorejuvenation for Asian Skin by Intense Pulsed LightDERMATOLOGIC SURGERY, Issue 7 2001Kei Negishi MD Background. Dermabrasion and deep chemical peeling are used in the treatment of photoaged skin. These ablative procedures are effective enough to produce a certain improvement but have often caused postinflammatory hyperpigmentation among Asian patients. To avoid such adverse effects, a new, nonablative procedure has been sought. Objective. To determine the effectiveness of photorejuvenation for Asian skin using intense pulsed light (IPL). The specific parameters used, improvement ratios, side-effects, and downtime required are also discussed. Methods. Ninety-seven patients were treated for photoaging using IPL. The cutoff filters of 550 nm and 570 nm were utilized for three to six treatments at intervals of 2 to 3 weeks. Results. Treatment results were evaluated and rated by both patients and physicians at the end of the third treatment based on improvement in pigmentation, telangiectasia, and skin texture. A combined rating of "good" or "excellent" was given to more than 90% of the patients for pigmentation, more than 83% for telangiectasia, and more than 65% for skin texture. There were some minor complications in four cases: one had erythema that continued to the next day and three had minor blisters leaving no marks. Conclusion. Photorejuvenation using IPL is a completely safe and effective procedure even for Asian skin. It will be increasingly used for skin rejuvenation in the future. The medical literature on cutaneous reconstructive and cosmetic surgery for the last century and a half was researched. Results. Numerous American dermatologic surgeons have had a major impact on scientific and technological discoveries in cutaneous surgery. Dermatologic surgeons have been significantly involved in cutaneous surgery since the second half of the 19th century. Dermatologic surgeons have contributed many important advances to the fields of chemical peeling, cryosurgery, dermabrasion, electrosurgery, hair transplantation, soft tissue augmentation, tumescent liposuction, laser surgery, phlebology, Mohs chemosurgery, cutaneous reconstruction, wound healing, botulium toxin, blepharoplasty, and rhytidectomy. Conclusion. Dermatologic surgeons in the United States have contributed significantly to the history of reconstructive and cosmetic surgery. Dermatologic surgeons have been leaders in advancing this field and are poised to continue in the future. Luna Summary The rapid tissue necrosis (RTN) is a common disease of both wild and captive stony corals, which causes a fast tissue degradation (peeling) and death of the colony. Here we report the results of an investigation carried out on the stony coral Pocillopora damicornis, affected by an RTN-like disease. Total abundance of prokaryotes in tissue samples, determined by epifluorescence microscopy, was significantly higher in diseased than in healthy corals, as well as bacterial counts on MB2216 agar plates. Further experiments performed by fluorescent in situ hybridization using a 16S rDNA Vibrio -specific probe showed that vibrios were significantly more abundant in diseased than in healthy corals. Accordingly, bacterial counts on TCBS agar plates were higher in diseased than in healthy tissues. 16S rDNA sequencing identified as Vibrio colonies from diseased tissues only. Cultivated vibrios were dominated by a single ribotype, which displayed 99% of similarity with Vibrio harveyi strain LB4. Bacterial ribotype richness, assessed by terminal-restriction fragment length polymorphism analysis of the 16S rDNA, was significantly higher in diseased than in healthy corals. Using an in silico software, we estimated that a single terminal restriction fragment, putatively assigned to a Vibrio sp., accounted for >,15% and < 5% of the total bacterial assemblage, in diseased and healthy corals respectively. These results let us hypothesize that the RTN in stony corals can be an infectious disease associated to the presence of Vibrio harveyi. However, further studies are needed to validate the microbial origin of this pathology. [source] MCMC-based linkage analysis for complex traits on general pedigrees: multipoint analysis with a two-locus model and a polygenic componentGENETIC EPIDEMIOLOGY, Issue 2 2007Yun Ju Sung Abstract We describe a new program lm_twoqtl, part of the MORGAN package, for parametric linkage analysis with a quantitative trait locus (QTL) model having one or two QTLs and a polygenic component, which models additional familial correlation from other unlinked QTLs. The program has no restriction on number of markers or complexity of pedigrees, facilitating use of more complex models with general pedigrees. This is the first available program that can handle a model with both two QTLs and a polygenic component. Competing programs use only simpler models: one QTL, one QTL plus a polygenic component, or variance components (VC). Use of simple models when they are incorrect, as for complex traits that are influenced by multiple genes, can bias estimates of QTL location or reduce power to detect linkage. We compute the likelihood with Markov Chain Monte Carlo (MCMC) realization of segregation indicators at the hypothesized QTL locations conditional on marker data, summation over phased multilocus genotypes of founders, and peeling of the polygenic component. Simulated examples, with various sized pedigrees, show that two-QTL analysis correctly identifies the location of both QTLs, even when they are closely linked, whereas other analyses, including the VC approach, fail to identify the location of QTLs with modest contribution. Our examples illustrate the advantage of parametric linkage analysis with two QTLs, which provides higher power for linkage detection and better localization than use of simpler models. Genet. Stevenson A community-based food hygiene initiative was piloted in the Toxteth,Granby area of Liverpool between December 2001 and March 2002. The project aimed to increase awareness and behaviour, related to poor food purchase, storage and handling practices, by actively involving members of the local community in home-based peer-facilitated training. Facilitators (23) were actively recruited from within the Toxteth,Granby community, and undertook a 4-day induction and training programme, which included successful completion of the CIEH Basic Food Hygiene course. Facilitators subsequently recruited and visited nearly 1000 households (992) within the Toxteth,Granby electoral ward, undertook an observation sheet, a detailed questionnaire, and spent approximately 1 hour delivering food hygiene training. Facilitators returned to all households within an 8-week period, and completed further observation sheets and questionnaires, for use in a comparative analysis. Facilitators and householders received incentives for their involvement in the project. Analysis of the data collected showed that general awareness of a range of food hygiene issues was high (such as hand washing before handling food), and most participants (73.8%) were able to recognise the main symptoms of food borne disease. As a result of the home-based hygiene training there were significant changes in knowledge, attitudes, and food handling practices, including the use of refrigerators, purchase of chilled and frozen foods, washing or peeling of fruits and vegetables, and the cooking of meat-based products. The project demonstrates that it is possible for communities to improve their food hygiene awareness and food handling behaviours through home-based peer-facilitated training programmes, with minimal input from professionals. Thus, the conditions of temperature and concentration of the enzymatic preparation were optimized in order to produce the maximum weight loss, which indicates good peeling efficiency. Experiments to study the efficiency of the reactor effluents by reusing them for successive enzymatic peelings were also carried out with the aim of diminishing the cost of the process. Clinical examination revealed desquamative gingivitis with no extra-oral involvement. The diagnosis was established as oral pemphigoid based on the clinical, histological, and immunofluorescence findings. Symptoms resolved on treatment with occlusive topical corticosteroids. The patient was a carrier of the HLA-DQB1*0301 allele. Conclusion., Mucous membrane pemphigoid should be considered in the differential diagnosis of chronic desquamative gingivitis in childhood. Occlusive therapy with topical fluocinonide may alleviate the symptoms. The efficacy of each procedure has been proved, but the results of the combination of these two methods have not been studied until now. Objectives, To assess and compare the efficacy of microdermabrasion followed by a 5% RA chemical peel with that of a 5% RA chemical peel alone. Methods, Six female patients with moderate degrees of photodamage were evaluated. Three submitted to microdermabrasion followed by the application of a 5% RA chemical peel and three submitted to a 5% RA chemical peel alone. Each patient underwent three treatment sessions, with intervals of 7,10 days. Photographs were taken, and both biopsies and histological assessments were carried out, before treatment and 7 days after the final treatment session. Results, In the opinion of the patients, in both groups there was improvement in the texture, pigmentation, and appearance of the treated skin, and this was confirmed with the assessment of the pre- and post-treatment photographs. The combination of microdermabrasion followed by a 5% RA peel showed slightly greater improvement in the histological alterations resulting from photoaging. Conclusion, Both methods, microdermabrasion followed by a 5% RA chemical peel and a 5% RA chemical peel alone are effective in the treatment of photoaging. DAS ABSTRACT Lye (sodium hydroxide [NaOH]) peeling is the most common method for peeling tomatoes in the Midwest U.S. With the rise in the cost of NaOH and the associated disposal problems, alternative methods for peeling need to be examined. Solutions of NaOH, potassium hydoxide (KOH) and calcium hydroxide (Ca[OH]2) at different concentrations were compared to determine their efficacy as peeling agents. Ca(OH)2 was ineffective as a peeling agent because of its low solubility. KOH produced peeling equivalent to NaOH, but at half the normality. A lower normality is needed because of the increased reactivity of KOH compared to NaOH. This is further demonstrated by the addition of salts to the solution. The use of KOH instead of NaOH may result in cost savings and decreased waste disposal problems. Peeling of kiwi fruits with alkali (NaOH) was investigated. Some chemical (acidity, pectin, and chlorophyll) and physical properties (Hunter color value and weight loss) of the fruits were determined after selected alkali peeling methods were used. Peeling methods at 80, 90 or 100C temperatures; in 13, 18 or 23% of NaOH solutions and for 3, 4 or 5 min durations were tested and compared with hand peeling. Weight (fruit tissue) loss in hand peeling was higher than alkali peeling. Peeling with alkali was easier. Nutritional value (ascorbic acid content) of alkali peeled fruits was higher than hand peeled kiwi fruit. Because of less weight loss, better green color and high pectin content the method including 15% of NaOH solution at 95C for 4 min was selected as most advantageous peeling method. [source] Inhibition of Browning on Fresh-cut Pear Wedges by Natural CompoundsJOURNAL OF FOOD SCIENCE, Issue 3 2006Gemma Oms-Oliu ABSTRACT: Mechanical operations such as peeling and cutting during minimal processing involve enzymatic browning of fruit tissue. The objective of this work was to evaluate the individual and combined effects of N-acetyl-L-cysteine, reduced glutathione, ascorbic acid, and 4-hexylresorcinol to control pear browning. Browning of fresh-cut pears was prevented by a minimum concentration of 0.75% N-acetyl-L-cysteine up to 28 d at 4°C. Reduced glutathione treatments were also effective along the storage time although browning was observed after 21 d of storage with a dip of 0.75% reduced glutathione. However, ascorbic acid or 4-hexylresorcinol treatments did not seem to completely prevent browning of pear wedges throughout the storage period. An enhanced antibrowning effect was observed when combining both N-acetyl-L-cysteine and reduced glutathione, considering hue angle as color change index. Thus, hue angle reached maximum levels at 1.5% N-acetyl-L-cysteine (NAC) or 1.5% glutathione (GSH) and 1% NAC with 1% GSH for 28 d. Besides, N-acetyl-L-cysteine, reduced glutathione and 4-hexylresorcinol completely inhibited polyphenol oxidase activity as well as browning inhibitors slightly reduced firmness of fresh-cut pears.
