Comparison of quality and shelf life of buffalo meat patties stored at refrigeration temperature

Summary Scientific investigation on the quality changes of processed meat products will boost and sustain the meat production and utilization in buffalo abundant countries. A programme was undertaken to compare the quality of buffalo meat patties made from intensively reared young male, semi extensively reared spent male and female groups and stored at refrigeration temperature (4 ± 1 °C). Buffalo meat patties were evaluated for shelf life attributes by analysing the changes in physicochemical, microbiological and sensory attributes. The overall acceptability of patties was better in spent buffalo group than young male group. Increasing storage time resulted in significantly higher pH, TBARS, total aerobic mesophils, coliforms, Staphylococcus aureus and psychrophilic counts but decreased appearance, flavour, juiciness, tenderness, connective tissue residue and overall acceptability scores of buffalo meat patties. The patties were well acceptable within 20 days in young male group and 25 days in spent buffalo group respectively during refrigerator storage. [source]


Population genetic analysis of the Brahman cattle (Bos indicus) in Colombia with microsatellite markers

Summary The Brahman is one of the most popular breeds for meat production in the Neotropics. However, genetic studies of the breed in Latin American countries have only recently begun. In total, 178 animals of the Brahman breed from 20 Colombian provinces were genotyped at 11 microsatellite markers with the aim of studying the genetic diversity of this population and its genetic relationships with zebuine and taurine breeds. The outcomes of multivariate analyses, Bayesian inferences and inter-individual genetic distances suggested that there is no genetic sub-structure in the population, because of the high rate of animal migration among provinces. The population shows a high degree of heterozygosity and allelic diversity compared with other breeds, reflecting its multibreed origin. The study of the genetic relationships among the breeds reveals that the Brahman breed belongs to the zebuine group. However, it is the population nearest to taurine breeds with high frequencies of taurine alleles. Intensive artificial selection may have favoured the taurine alleles after the breed was formed. There has also been some degree of mixture with local taurine breeds while the Brahman breed has evolved in Colombia. [source]


Influence of dietary lipid source and strain on fatty acid composition of Muscovy duck meat

Summary A trial was conducted to study the effect of dietary 2% soya bean oil and dietary 2% fish oil (FO) on fatty acid composition of breast meat of two different Muscovy duck (Cairina moschata domestica L.) strains. The two strains were a broiler strain selected for meat production and an unselected rural strain. Fatty acid composition of breast muscle was deeply influenced by lipid source. Dietary FO improved the long chain polyunsaturated fatty acids (LC-PUFAs) of omega 3 series content, while the content of LC-PUFAs of omega 6 series was reduced. Differences in susceptibility in lipid manipulation were found between the two groups of animals suggesting the highest capability of animals belonging to the rural strain in stocking arachidonic acid in breast muscle. As the fatty acid profile of Muscovy duck meat can be considerably modified by changing the fatty acid composition of the diet, and dietary FO represents an easy way to reach this goal, human intake of healthy n-3 LC-PUFAs could be enhanced using this enriched poultry meat, even if the influence of FO on organoleptic characteristics (i.e. off-flavours) must be evaluated. Properties of refrigerated ground beef treated with potassium lactate and sodium diacetate

Abstract BACKGROUND: Ground meat is product that perishes easily and therefore various preservatives are applied to prolong its shelf life. The aim of this study was to investigate the effect of potassium lactate and sodium diacetate (Protec K-DI preparation) on general proteolytic activity, protein degradation, texture, colour and water-holding capacity of vacuum-packaged ground beef. RESULTS: The activity of endogenous proteolytic enzymes, and hence the rate of protein hydrolysis changed significantly (P < 0.05) during refrigerated storage. The proteolysis was more intensive in the meat with the preservative than in a control sample. According to the results of SDS-PAGE, the level of myosin in ground beef decreased with increasing storage time, whereas the preservative did not have a significant effect (P > 0.05) on these changes. However, its impact was the most significant in the case of tropomyosin and troponin T content, as well as changes of 30 kDa protein content. The preservative as well as the increase in storage time influenced an increase in content of polypeptides, peptides and some amino acids in the samples, and had an inhibiting effect on unfavourable changes in ground beef hardness. The preservative addition allowed the meat to maintain desired meat colour, and the main pigment during refrigerated storage was oxymyoglobin (MbO2). CONCLUSION: Results showed that the Protec K-DI preparation can be useful in minced meat production as a good stabiliser of colour and texture despite the increase observed in proteolytic activity after the preservative addition. Molecular characterization of esterase E3 gene associated with organophosphorus insecticide resistance in the New World screwworm fly, Cochliomyia hominivorax

Abstract The New World screwworm, Cochliomyia hominivorax (Coquerel) (Diptera: Calliphoridae), is one of the most important myiasis-causing flies in South America. It is responsible for severe economic losses to livestock producers, mainly because it causes mortality in newborn calves and reductions in the quality of leather and in the production of milk and meat. The economic losses caused by myiasis, along with those caused by other internal and external parasites, are the main factors limiting meat production. In Brazil, C. hominivorax has been controlled by applying insecticides, particularly organophosphate (OP)-based compounds. However, the improper and continuous use of these chemicals can lead to the selection of OP-resistant strains. This, associated with the fast development of OP resistance in other myiasis-causing flies, shows the importance of investigating resistance in C. hominivorax. Based on the findings of previous studies, the objective of the current work was to isolate and sequence the E3 gene in C. hominivorax. Mutations at the positions (Gly137 and Trp251) responsible for conferring OP resistance in Lucilia cuprina and Musca domestica L. (Muscidae) were identified in C. hominivorax. In addition, the orthologous region in C. hominivorax contained motifs that are highly conserved among carboxyl/cholinesterases and contribute to the catalytic mechanism of the active site. The characterization of this gene in natural populations of New World screwworm can be an important tool for monitoring resistance to insecticides throughout its current geographic distribution. This will provide information for the selection and implementation of more effective pest management programmes. [source]


Modified atmosphere packaging of fresh meats,sudden partial adaptation caused an increase in sustainability of dutch supply chains of fresh meats

Abstract In the past decade, a major transition evolved in the Dutch fresh meat industry with ramifications for the entire meat business. In 1995, more than 95% of all fresh meat products for consumers were either sold loose or packed in the traditional way, i.e. on a white styrofoam tray with stretch wrap. Almost a decade later, about half of the meat industry has adapted the modified atmosphere packaging (MAP) technology. Strikingly, the first trials with this technology had already been conducted in The Netherlands in 1964, but it took four decades for the technology to conquer the Dutch meat industry. This paper argued that the partial adaptation of MAP diminished the product losses in fresh meat sales and hence the environmental impact of meat production and consumption. Polymorphisms in the ovine myostatin gene (MSTN) and their association with growth and carcass traits in New Zealand Romney sheep

Summary Myostatin is a regulator of myogenesis and has been implicated in the regulation of adiposity and in controlling the structure and function of tendons. Polymerase Chain Reaction Single-Stranded Conformational Polymorphism (PCR-SSCP) analysis of intron-1 was used to identify five variants (designated A-E) of the myostatin gene (MSTN). The effect of this genetic variation on growth and carcass traits was investigated in 517 Romney male lambs from 17 sire-lines, born on a South Island New Zealand farm. General linear mixed effect models revealed that the presence of allele A in a lamb's genotype was associated with decreased leg, loin and total yield of lean meat, whereas the presence of allele B was associated with increased loin yield and proportion loin yield (loin yield divided by total yield expressed as percentage). The effect of the number of allele copies present was investigated, and it was found that the absence of A, or the presence of two copies of B, was associated with increased mean leg yield, loin yield and total yield. Two copies of B were also associated with a decrease in proportion of shoulder yield, whereas two copies of A were associated with a decrease in proportion of loin yield. Associations with allele C were not detected. No associations of MSTN variation with birth weight, weaning weight, pre-weaning growth rate, draft age and hot carcass weight (H-W) were detected. These results suggest that variation in ovine MSTN is associated with meat production, but not birth weight or growth rate in New Zealand Romney sheep. [source]


Study on bioactive compounds of in vitro cultured Calculus Suis and natural Calculus Bovis1

ABSTRACT The purpose of the study was to investigate bioactive compounds of in vitro cultured Calculus Suis and natural Calculus Bovis obtained as valuable by-products from animals used for meat production. The results showed that the components of natural Calculus Bovis were rich in bilirubin and biliverdin and had higher content of essential amino acids. The major amino acids of in vitro cultured Calculus Suis were identified as glycine, alanine, glutamic acid and aspartic acid, and those for natural Calculus Bovis were found to be glutamic acid, aspartic acid, proline, and arginine. The methionine and cysteine contents of precursors for glutathione in natural Calculus Bovis were significantly higher than those of in vitro cultured Calculus Suis. The mineral contents of zinc, iron and manganese of natural Calculus Bovis were significantly higher than those of in vitro cultured Calculus Suis. The major bile acids in both products were cholic acid and dehydrocholic acid, respectively. The chenodeoxycholic and ursodeoxycholic acid content of in vitro cultured Calculus Suis was significantly higher than that of natural Calculus Bovis. [source]


Analysis of consumers' preferences and behavior with regard to horse meat using a structured survey questionnaire

ABSTRACT In this study, a structured survey questionnaire was used to determine consumers' preferences and behavior with regard to horse meat at a horse meat restaurant located in Jeju, Korea, from October 1 to December 24, 2005. The questionnaire employed in this study consisted of 20 questions designed to characterize six general attributes: horse meat sensory property, physical appearance, health condition, origin, price, and other attributes. Of the 1370 questionnaires distributed, 1126 completed questionnaires were retained based on the completeness of the answers, representing an 82.2% response rate. Two issues were investigated that might facilitate the search for ways to improve horse meat production and marketing programs in Korea. The first step was to determine certain important factors, called principal components, which enabled the researchers to understand the needs of horse meat consumers via principal component analysis. The second step was to define consumer segments with regard to their preferences for horse meat, which was accomplished via cluster analysis. The results of the current study showed that health condition, price, origin, and leanness were the most critical physical attributes affecting the preferences of horse meat consumers. Four segments of consumers, with different demands for horse meat attributes, were identified: origin-sensitive consumers, price-sensitive consumers, quality and safety-sensitive consumers, and non-specific consumers. Significant differences existed among segments of consumers in terms of age, nature of work, frequency of consumption, and general level of acceptability of horse meat. [source]


Effect of methionine hydroxy analog-free acid on growth performance and chemical composition of liver of broiler chicks fed a corn,soybean based diet from 0 to 6 weeks of age

ABSTRACT The experiment was carried out to determine the effects of liquid DL-methionine hydroxy analog-free acid (LMA) and dry DL-methionine (DLM) on growth performance, carcass quality and chemical composition of the livers of broiler chicks during 0,6 weeks of age. Four hundred and fifty male commercial broiler chicks (Ross strain) were used. The chicks were divided into three groups, and each group consisted of six replicates of 25 chicks each. The chicks were kept in floor pens, and water and feed were supplied ad libitum throughout the experiment. Three experimental diets were provided as follows: (i) corn,soybean-based diet deficient in methionine; (ii) methionine-deficient corn,soybean-based diet supplemented with DLM to meet the methionine requirements of broiler chicks; and (iii) methionine-deficient corn,soybean-based diet supplemented with LMA (1.25-fold (w/w) the amount of DLM supplied to the second group, given an assumption that 100 units of liquid LMA can be replaced by 80 units DLM to give similar performance results). During the starter period, the weight gains of chicks fed LMA or DLM were significantly greater than those in chicks receiving the methionine-deficient diet (P < 0.05), and the addition of LMA significantly improved weight gain compared with the addition of DLM. Adding DLM or LMA significantly improved the feed conversion ratio (FCR) and percentage of uniformity (P < 0.05). No significant differences between the effects of DLM and LMA on these parameters were found. During the grower period (3,6 weeks of age), weight gain, FCR, uniformity and feed intake of chicks that received diet supplemented with DLM or LMA were superior to those of the methionine-deficient group (P < 0.05). Chicks fed LMA had the same bodyweight gain and uniformity as those fed DLM. However, adding LMA resulted in a significant increase of FCR resulting from excess feed consumption. Outer breast meat yields were significantly improved and abdominal fat was significantly decreased when methionine sources were added (P < 0.05), and adding LMA tended to promote edible meat growth better than did adding DLM. Although no significant effects of methionine sources on the chemical composition of the liver were seen, adding methionine sources tended to increase liver fat content. In conclusion, it seems that the bioefficacy of LMA relative to DLM is not less than 80%. Therefore, chicks fed with diet supplemented with 1.25-fold (w/w) as much LMA as DLM might exceed requirements for growth performance, while meeting requirements for meat production. Moreover, the relative bioefficacies of LMA and DLM between the starter and grower periods may perhaps be different. [source]


Strain differences in feed efficiency measured as residual feed intake in individually reared rainbow trout, Oncorhynchus mykiss (Walbaum)

Abstract The efficient use of feed for growth and meat production is important for all animal production industries including aquaculture. Residual feed intake (RFI) is an alternative measure of feed efficiency that has been widely used in livestock production. Residual feed intake was calculated as the difference between intake observed and intake predicted on the basis of a bioenergetics model; a low RFI indicates greater efficiency. Residual feed intake offers some advantages as a selection criterion for improving production efficiency over traditional feed efficiency statistics because it is not a ratio and it typically has a larger coefficient of variation. The RFI of individually reared rainbow trout progeny from six different genetic cross-types was examined for genetic variation. Proximate analysis and nitrogen retention were also evaluated to determine if differences in RFI correlate to differences in body composition and nutrient retention and varied by cross-type. Differences between cross-types indicated a genetic component for RFI, with the most efficient fish of approximately 160 g consuming 0.99 g less and inefficient fish consuming 0.05 g more feed per day than expected. Lower RFI was associated with higher growth rates (r=,0.38, P<0.05) and greater nitrogen retention (r=,0.82 P<0.001). [source]


A food safety control low mass-range proteomics platform for the detection of illicit treatments in veal calves by MALDI-TOF-MS serum profiling

Abstract Performance enhancing agents (PEAs) are illegally used in cattle and other meat producing species to increase food conversion and lean meat production. Due to the very short breeding cycle, veal calves represent the meat producing bovine category mostly subjected to illicit treatments. These chemical agents are difficult to detect by conventional analytical approaches due to the employment of synergistic formulations at very low dosage and given the use of uncharacterized novel compounds. Such a scenario has fostered a strong interest in the discovery of functional molecular biomarkers for the detection of growth promoting agents in meat producing species. A multivariate MALDI-TOF-MS proteomics platform has been developed using bovine serum samples. Analytical performances have been thoroughly evaluated in order to enable reproducible profiles from 10 ,L sera samples. We propose univariate and multivariate discrimination models capable to identify calves undergoing illicit treatments. In particular, we found a strong discrimination power associated with a polypeptide fragment from ,2-glycoprotein-I. We provide a fundamental proof of concept in the potential application of MALDI-TOF-MS proteomics profiling in the food safety control. [source]
