BAKING PERFORMANCE AND CONSUMER ACCEPTABILITY OF RAW AND EXTRUDED COWPEA FLOUR BREADS

ABSTRACT Cowpea flour was used to partially replace wheat flour in yeast bread, using automatic household-type bread machines for mixing, proofing and baking. Loaves containing 15 or 30% extruded cowpea flour weighed more (683.4 g) than loaves from other treatments (641.1,652.6 g). The 100% wheat had the highest loaf volume (2.58 L) and the 30% extruded cowpea the lowest (1.64 L). Cowpea flour breads contained more protein (13.9,15.4%) than the 100% wheat (4.1% fat, 12.5% protein). Bread made with 15% extruded cowpea flour was not different (P < 0.05) from the all-wheat control in sensory quality and acceptability. Hedonic ratings for the control and 15% extruded cowpea flour ranged from 6.6 (like slightly) to 7.4 (like moderately) for all sensory attributes. The least liked samples contained either 30% raw or 30% extruded cowpea flour, receiving ratings for all attributes ranging from 4.8 (disliked slightly) to 6.2 (liked slightly). Overall, 15% extruded cowpea flour demonstrated successful bread making performance without compromising sensory quality. [source]


Addition of Soluble Soybean Polysaccharides to Dairy Products as a Source of Dietary Fiber

Abstract:, Increasing consumption of dietary fiber in food leads to many important health benefits: for example, reduction in blood cholesterol, reduced risk of diabetes, and improved laxation. Water soluble soybean polysaccharide (SSPS) is a dietary fiber extracted and refined from okara, a byproduct of soy manufacturing. It was incorporated into 3 categories of dairy-based products, thickened milkshake-style beverages, puddings, and low-fat ice cream, to the maximum amount without over-texturing the food. Rheological measurements and sensory tests were used to develop desirable SSPS-fortified products. From the rheological data, 4% SSPS-fortified dairy beverages and 4% SSPS -fortified puddings were in the range of commercial products. From sensory analyses, 4% SSPS-fortified dairy beverage with 0.015%,,carrageenan, 4% SSPS-fortified pudding with 0.1%,,carrageenan, and 2% SSPS-fortified low-fat ice cream gained the highest scores in consumer hedonic rating. Panelists also indicated their willingness to consume those products if they were available commercially. Practical Application:, Since the dietary fiber intake of many people is below their suggested adequate intake values, strategies to successfully fortify foods with fiber may help alleviate this gap. We have developed 3 dairy products, a beverage, a pudding, and a low-fat ice cream, that have been fortified with soluble soybean polysaccharide at levels of 4%, 4%, and 2%, respectively. These products were within acceptable ranges of rheological parameters and other physical stability measurements and were judged to be acceptable by sensory analyses. [source]


Comparison of best,worst and hedonic scaling for the measurement of consumer wine preferences

Abstract Background and Aims:, Best,worst scaling (BWS) is compared to standard hedonic scaling for measuring consumer wine preferences. BWS is a relatively new method for producing ratio-level scales and has gained recent attention for application in sensory research, but has not been applied to wine. Methods and Results:, Regular wine consumers (112) evaluated eight designed wines with both scaling methods in an intra-subject design over two test periods. The methods did not result in comparable product liking results. The eight wines could almost be differentiated on an aggregated level with hedonic ratings (P = 0.076); there was no significant difference with BWS. Latent class analysis was used to identify two clusters, which differed on the preferences for the designed sensory components. The BWS design had to be split into several blocks, so no complete individual measures were available, which prevented analysing heterogeneity for this method. Conclusions:, BWS needs more wines to be assessed per person in order to discriminate between red wines and to allow modelling of consumer preference heterogeneity. Respondents would have to accomplish complete individual BWS designs, which requires repeated exposure to the same set of wines over several tasting sessions. Significance of the Study:, This study demonstrates that BWS is not as suitable for sensory consumer preference measurement of red wine as hedonic rating. While BWS has shown a higher discriminative ability for different products and in non-sensory research, the factors of alcohol, tannin and memory fatigue make it less practical for red wine sensory measurement compared to hedonic rating.
