Kinetic Parameter Estimation of Time-temperature Integrators Intended for Use with Packaged Fresh Seafood

ABSTRACT: The United States Food and Drug Administration (USFDA) considers any hermetically sealed package containing fresh seafood as a reduced oxygen package (ROP) if the oxygen transmission rate of the package is less than 10000 cm3/m2/d. USFDA's recent Import Alert nr 16-125 effectively bans the use of ROP for fresh seafood in the United States unless adequate temperature control and thermal history monitoring is used. Time-temperature integrators (TTI) were proposed as one potential method to satisfy this thermal monitoring requirement. Evaluation and selection of appropriate TTIs remains a difficult process for seafood manufacturers. Three commercially available TTIs (Vitsab M2-10, C2-10, and Fresh-Check TJ2) and 5 prototype TTIs (Avery Dennison) were evaluated for performance against the Skinner and Larkin (1998) botulinum toxin lag-time relationship. Isothermal treatments at 0°C, 5°C, 10°C, and 15°C were used to determine Arrhenius kinetic parameters of TTIs. Computer models were used to predict and compare actual TTI performance under dynamic thermal conditions. Results suggest that Vitsab M2-10 and Avery Dennison T126(2) and T126(4) TTIs may be used to predict safety of fresh seafood in ROP. [source]


PREVALENCE AND ANTIMICROBIAL RESISTANCE OF LISTERIA SPECIES IN FOOD PRODUCTS IN BANGKOK, THAILAND

ABSTRACT A total of 380 meat and meat products, dairy and dairy products, fresh vegetables, fresh seafood, and ready-to-eat food samples from supermarkets in Bangkok, Thailand were collected and analyzed for the occurrence of Listeria spp. and of Listeria monocytogenes. The overall incidence of Listeria spp. was 16.8%, most of them were isolated from raw meat and vegetables. L. monocytogenes was isolated from 18 (4.7%) out of 380 studied samples. Other species isolated were L. innocua (6.6%), L. ivanovii (0.8%), L. seeligeri (0.5%), L. grayi (1.6%) and L. welshimeri (2.6%). The antimicrobial susceptibilities of the 64 isolate of Listeria spp. were also examined by the standard disk diffusion method. Listeria spp. were resistant to penicillin (6.3%), chloramphenicol (3.1%) and tetracycline (1.6%), but sensitive to amoxicillin, vancomycin, ampicillin, rifampicin and sulfamethoxazole. PRACTICAL APPLICATIONS Listeria monocytogenes prevalence in food products in Bangkok has been documented. More studies on the occurrence of L. monocytogenes are needed to establish microbiological criteria of foods in the country. The findings of our study, increases in antibiotic resistance among Listeria spp. will provide useful information for the development of public health policy in the use of antimicrobials in food animal production. Detection of Shiga-toxigenic Escherichia coli (STEC) in fresh seafood and meat marketed in Mangalore, India by PCR

Aims: To study the incidence of Shiga-toxigenic Escherichia coli (STEC) in seafoods from India. Methods and Results:Escherichia coli isolated from various seafoods such as fresh fish, clams and water were screened for the presence of stx, hlyA and rfbO157 genes by PCR; 5% of clams and 3% of fresh fish samples were positive for non-O157 STEC. Conclusions: STEC is prevalent in seafoods in India, and non-O157 serotype is more common. Significance and Impact of the Study: Seafood could be a vehicle for transmission of STEC even in tropical countries. [source]


High body mass index and dietary pattern are associated with childhood asthma

Abstract The increasing prevalence of asthma has coincided with an increase of body mass index (BMI) in both children and adults. We investigated the relationship between BMI and the symptom prevalence of asthma and the possible influences of dietary pattern. This was a community-based, cross-sectional study of 24,260 school children aged 6,12 years. Prevalences of asthma and potential confounding factors were assessed using a Korean version of the International Study of Asthma and Allergies in Childhood (ISAAC) questionnaire which was completed by parents. We analyzed the relationship between BMI and symptoms of asthma and the possible influences of dietary pattern. A significant positive association between high BMI and previous 12-month prevalence of wheeze remained in boys (adjusted odds ratio, 1.610; 95% confidence interval, 1.274,2.033) but not in girls. In addition, there were significant associations between high BMI and lifetime prevalence of wheeze, previous 12-month wheeze, exercise-induced wheeze, diagnosis, and treatment of asthma. There were significant associations between high BMI and previous 12-month wheeze regardless of breast-milk feeding or whole-milk feeding. Frequent intake of fresh seafood, fresh fruits, and vegetables was associated with reduced prevalence of current asthma symptoms and was also associated with decreased BMI. These results indicate that BMI may be an independent risk factor for the development of asthma symptoms in boys. Intake of fresh seafood, fresh fruit, and vegetables, which may be associated with decreased BMI, may contribute to protect against the development of asthma symptoms in Korean elementary schoolchildren.
