Tales from Two Deltas: Catfish Fillets, High-Value Foods, and Globalization

Abstract: This article examines two places of catfish production, the Mekong River Delta of Vietnam and the Mississippi River Delta of the United States, and uses the concept of globalization to illustrate how these distant places have been brought into competition and how this competition is mediated. Bringing these deltas together is a similar commitment to an economic development strategy that is based on catfish production, a desire to gain access to wealthy consumers who are willing to purchase this high-value food item, and processing and transportation technologies that allow this perishable product to be made more "durable" and to be shipped great distances. Mediating this relationship are consumers' preferences, product labeling, and the U.S. state. This case study illustrates the heterogeneous outcomes of globalization as these deltas are brought into a relationship that, in some ways, is closer than their absolute distance may indicate. The "backlash" forces, such as nontariff trade barriers, nationalism, and a still-powerful state (as both a regulator and consumer), characterize these globalizations. [source]


Chlorpyrifos Residues Before and After Cooking of Catfish Fillets

ABSTRACT :In this paper, chlorpyrifos residues were compared before and after frying, smoking or baking and quantified using GC/ECD (gas chromatography/electron capture detector) and ELISA (enzyme-linked immunosorbent assay) methods. All cooking methods reduced chlorpyrifos by 8 to 52% on a dry basis or 12 to 56% on a fat basis. Frying, which reduced chlorpyrifos residue by 56% on a fat basis was shown to provide the greatest reduction when compared to baking (22%) and smoking (12%). Statistical analysis showed that results from the GC/ ECD and ELISA methods were not significantly different (p= 0.05). [source]


The Effects of Irradiation, High Hydrostatic Pressure, and Temperature during Pressurization on the Characteristics of Cooked-reheated Salmon and Catfish Fillets

ABSTRACT: Fully-cooked salmon and catfish fillets were treated by ionizing radiation (0, 3, or 6 kGy), high hydrostatic pressure (HHP) (0, 414, or 690 MPa), 2 different temperatures during pressurization (ambient-HHP approximately equal to 21 °C, or heated-HHP = 70 °C), and combinations of the treatments. Kramer shear values increased for salmon and catfish fillets treated by HHP, heated-HHP, and a combination treatment. Tenderness and juiciness scores of salmon and catfish fillets were lower with HHP, heated-HHP, and a combination treatment. Irradiation decreased CIE a* values of salmon, and CIE b* values of salmon and catfish. Irradiation increased tenderness and juiciness scores of salmon and increased flavor intensity of catfish. Antibiotic resistance in Listeria species isolated from catfish fillets and processing environment

Abstract Aims:, To investigate the susceptibility of 221 Listeria spp. (86 Listeria monocytogenes, 41 Listeria innocua and 94 Listeria seeligeri-Listeria welshimeri-Listeria ivanovii) isolated from catfish fillets and processing environment to 15 antibiotics. Methods and Results:,Listeria isolates were analysed by disc-diffusion assay for their resistance to 15 drugs. All isolates were resistant to cefotaxime and clindamycin but were sensitive to ampicillin, cephalothin, chloramphenicol, erythromycin, gentamycin, kanamycin, rifampin, streptomycin, sulfamethoxazole/trimethoprim and vancomycin. Unlike L. monocytogenes and L. seeligeri-L. welshimeri-L. ivanovii isolates, 22% of L. innocua isolates displayed tetracycline/oxytetracycline resistance. Screening of tet genes by PCR identified tet(M) gene in the chromosome of all tetracycline/oxytetracycline-resistant L. innocua. However, this gene was not associated with the integrase gene of Tn1545. Repetitive extragenic palindromic- and enterobacterial repetitive intergenic consensus-PCR typing methods showed no genotype-specific tetracycline resistance in the tet(M)-positive strains. Conclusions:, Catfish fillets and processing environment were currently free of L. monocytogenes resistant to antibiotics commonly used in human listeriosis treatment. However, the presence of tet(M) gene in L. innocua raises the possibility of future acquisition of resistance by L. monocytogenes. Significance and Impact of the Study:, These data will be helpful in improving background data on antibiotics resistance strains isolated from food and processing environment. [source]


The effects of ice storage on inosine monophosphate, inosine, hypoxanthine, and biogenic amine formation in European catfish (Silurus glanis) fillets

Summary European catfish fillets in ice were evaluated by measuring nucleotide components and biogenic amine contents and these then compared with sensory and microbiological assessment during the 21 days of iced storage. Analyses were carried out using two different rapid HPLC methods for nucleotid degradation products and biogenic amine contents in European catfish fillets. Sensory evaluation showed that storage life of European catfish found to be 14,18 days. Initial inosine monophosphate (IMP) level was 12.6 ,mol g­1 and then decreased during the rest of storage period. Inosine (INO) level increased rapidly until 7 days of storage. Hypoxanthine (Hx) level increased almost linearly with storage time. The most accumulated biogenic amines were putrescine, cadaverine, spermidine, spermine, and serotonin in all the European catfish fillets during the storage, although the formation of biogenic amines levels was fluctuated. Histamine was only detectable at 4 and 7 days of storage as low as 1 mg 100 g­1 fish. Total viable count in European catfish increased rapidly with storage time and reached ,109 cfu g­1 when the fillets were not acceptable for consumption. [source]
