Influence of Extrusion-Cooking Parameters on Some Quality Aspects of Precooked Pasta-Like Products

ABSTRACT:, The present article aims to evaluate some quality parameters and texture characteristics of precooked wheat pasta-like products. Using the methods for pasta and instant noodles the tested parameters were water absorption, starch gelatinization degree, cooking losses, and hardness. The texture profile was characterized using Zwick apparatus by cutting test with the head speed of 10 mm/min and expressed as hardness and firmness of hydrated products. SEM pictures were used to illustrate the internal structure of dry and cooked pasta-like products. Dough moisture content and process conditions influenced all tested quality parameters of the pasta-like products processed on a modified single screw extrusion-cooker TS-45 with L: D,=,16: 1. Good organoleptical quality (notes higher than 4 in a 5-point scale) and firm texture were observed for common wheat flour pasta processed at 30% m.c. Hardness and firmness of hydrated products lowered with a longer hydration time in hot water. The firmest texture and low stickiness was observed for products with a highest starch gelatinization degree. [source]


EFFECTS OF ACIDIFICATION ON PE ACTIVITY, COLOR AND ANTIOXIDANT PROPERTIES OF COLD BREAK TOMATO JUICE

ABSTRACT Turbidity maintenance, high antioxidant activity and attractive red color are important attributes of good tomato juice. Acidification was found effective in pectin esterase (PE) inactivation and turbidity maintenance. However, no information related to the changes of antioxidant properties after enzyme inactivation by acidification has been reported. In this article, acidification of cold break tomato juice to pH 2 or 3 was conducted after extraction. The changes of antioxidant properties (content and activity) and their correlation with PE activity and color in the juice were studied. Results indicated that acidification enhanced the viscosity of tomato juice by decreasing its PE activity. Significant increases of the main antioxidant contents (lycopene, polyphenols and vitamin C) and antioxidant activities (1,1-diphenyl-2-picrylhydrazyl scavenging, ferrous ion chelating ability [FICA] and reducing power), as well as red color, were also found. In addition, the acidified cold break tomato juice exhibited better FICA and reducing power than butylated hydroxyanisole and, -tocopherol. This finding reveals the possibility of producing tomato juice with high antioxidant capacities by acidification. PRACTICAL APPLICATIONS The consumers' demand for healthy products with high quality toward fresh and health has increased remarkably these years. Tomato is one of the most popular vegetable juices, and its important quality aspects are color, stability and antioxidant capacity. Pectin esterase is the principal agent responsible for tomato juice stability. In addition, the goal of tomato juice processors is to optimize processing conditions by prevention of heat and oxidative damages on antioxidant components. Our results indicated that acidification may stabilize tomato juice and improve its color characteristics and main nutritional factors. Therefore, the acidification treatment could be used as a tool for providing the attractive color and enhancing the nutritional value and health-promoting properties of cold break tomato juice. DETECTION OF SALMONELLA TYPHIMURIUM IN OYSTERS BY PCR AND MOLECULAR HYBRIDIZATION

ABSTRACT Because shellfish (oysters, clams and mussels) are filter feeders, i.e., able to concentrate pathogens from the surrounding waters within their tissues, they have been widely associated with outbreaks illness. The incidence of salmonellosis caused by the consumption of raw or undercooked shellfish, is a primary concern of public health agencies. Then, in recent years, more rapid and specific methods based on the DNA sequence of salmonella genes have been developed to detect low levels of pathogens in environmental and food samples. In this study, we developed a sensitive method to detect low levels of Salmonella typhimurium in oyster tissues (0.1 cfu/g). This methodology consisted of dissection of the gastrointestinal oyster tract, pre-enrichment of the samples in nonselective medium, DNA extraction and polymerase chain reaction followed by molecular hybridization using a digoxygenin-labeled amplicon-derived probe. These results can benefit the public health agencies and shellfish producers concerning microbiological and quality aspects of the commercial oyster production. [source]


Influence of Storage Atmosphere and Temperature on Quality Evolution of Cut Belgian Endives

ABSTRACT: An optimal combination of O2, CO2, and N2 for storage of cut Belgian Endive was defined, investigating visual quality aspects. In the experimental design, principles of mixture theory were used. The acceptability of cut endives stored under different gas combinations, selected in the range where both CO2 and O2 were varied between 2% and 18%, was evaluated by a consumer panel at different time intervals during storage. The response was modeled with a second-degree polynomial, the response surface pointed in the direction of a gas mixture 10% CO2, 10% O2, and 80% N2 for maximum acceptability or best quality during storage. Repeated experiments, including different varieties from 2 different growers, confirmed the optimal gas concentration, (10% CO2, 10% O2, and 80% N2). In a second step, the effect of temperature on quality degradation of cut endives stored under optimal atmosphere conditions, was quantified using the Arrhenius equation. An activation energy of 16.3 kcal/mol was obtained. [source]


Factors affecting the meat quality of veal

Abstract Over the last 50 years the veal industry has seen a number of changes, in particularly in production systems with the introduction and acceptance of grain-fed and heavier calves and the progressive move from individual pens to group housing. Reasons for the changes are multi-faceted of which two important players are the well-being of the animal and the public perception of the industry. Regardless of the reasons for the changes, breeders strive to attain veal conforming to the rigorous standards reflecting consumer demands. Consequently a multitude of publications exists on production factors in veal farming. However, many of these reports stop at the ,farm gate', or more correctly, the slaughterhouse, where carcass characteristics in particular are assessed. Changes in production systems generally aim to improve feed efficiency and weight gains, but often overlook meat quality aspects which ultimately dictate financial gains. This review aims to summarise the existing and available literature on factors affecting the quality of veal meat. The topics covered include the effects of breed, sex, weight or age, diet composition and dietary treatments, environment and pre-slaughter handling, and processing factors such as stunning, electrical stimulation, ageing and packaging.
